Geschichte der Stadt Beaune. Der Grundstein für meine Entwicklung im Weinbau wurde 1989 gelegt, dem Jahr meiner Ankunft auf dem Weingut. Rund zehn Jahre lang (1989-1999) diente die Suche nach dem Wesen und der intimen und einzigartigen Natur jedes unserer Terroirs als Grundlage für meine Überlegungen bezüglich der Orientierungen des Weinguts in Sachen Anbaumethoden und Umwelt. Im Jahr 2000 stoppten wir die Verwendung von Unkrautvernichtungsmitteln in unseren Weinbergen und führten die Bodenbearbeitung ein.
