Cooking for Mom™

Cooking for Mom™. A journal about the experience of cooking healthy and nutritious meals for my senior mother. Wednesday, May 5, 2010. Pressure Cooker Pork Tenderloin. Last night I made pork tenderloin in the pressure cooker. The entire meal took 12 minutes to cook! Having never made pork tenderloin before, I had no idea it would shrink as much as it did. I suspect it was over cooked, but was assured by my meat eating honey that it was delicious and moist. Pork Tenderloin with roasted potatoes and carrots.

Cooking for Mom™. A journal about the experience of cooking healthy and nutritious meals for my senior mother. Thursday, April 15, 2010. For the past month, I have been very busy with work. The work I do is not 9 to 5, but often involves seeing a project through even if that means working late into the night. Because of this, I have new time pressures on cooking for mom. This month, I have tried several new strategies to help get the job done quicker and more efficiently. Today, I had a chunk of four hou...

Cooking for Mom™. A journal about the experience of cooking healthy and nutritious meals for my senior mother. Monday, January 18, 2010. Mom called the other day upon the arrival of her food. She was crying. She had just tasted the chicken salad and was calling to tell me how incredible it was. She was overwhelmed with the food, the flavors, the work she knows I put into it, and the gift it is to her. The Joy of Cooking. I love to pay homage to her dishes by returning them to her today. But I also li...

Cooking for Mom™. A journal about the experience of cooking healthy and nutritious meals for my senior mother. Tuesday, February 16, 2010. I delivered a new batch of food to mom last week. Mom is now enjoying a whole new selection of entrees. She called yesterday to tell me how yummy the frittata is—in fact, she interrupted EATING the frittata to call me about it! That was funny. I do believe frittata is turning into one of her favorite meals. The current menu is as follows. Three cheese spinach frittata.

Cooking for Mom™. A journal about the experience of cooking healthy and nutritious meals for my senior mother. Saturday, October 31, 2009. She Thoght It Was Meat! Mom thought the stroganoff was beef! She had no idea- she called to thank me and tell me how absolutely delicious the stroganoff was- in fact, it was the first of the three choices she picked last night to eat. She was flabbergasted when I told her. It was the best stroganoff I've ever made if I do say so. Two cheese spinach frittata. As a resu...
