Cooking with Katie | Hi, I'm Katie! Thanks for coming to cook with me!
Chicken Cannelloni with Panzanella Salad. This is one of my new favorite dinners, it’s so easy, and it is absolutely delicious! It’s also really fun to make…you get to use your hands, which always makes me feel like I’m a little kid playing with my food. Plus, there are so many bright, robust flavors in this show-stopper stuffed pasta, and the cool salad on the side is a nice change-up to the traditional garden salad. I promise that you’ll love it! This salad is SO SO good! 2 tbsp. olive oil. 2 1/4 c milk.

Put a li...

Healthy Cooking for an Unhealthy Appetite
Healthy Cooking for an Unhealthy Appetite. A cooking blog for people who love to eat, and don't believe that taste needs to be a trade off with healthy. Monday, April 8, 2013. Butternut Squash and Sausage Bake. This is a great dish for emphasizing how meat can be used to enhance the flavor of dish, rather than be the centerpiece of it. Even my meat loving boyfriend loves this dish! Serves 4 to 6 (depending on whether you have a side dish or not). 1/4 pound Italian sausage (or less! Olive oil, as needed.

I'm No Spring Chicken! I’m No Spring Chicken. Cooking has become my therapeutic way of dealing with the events in my life. Cooking has challenged me to try new recipes and new foods that I have never had before. It was also a great way to spend my winters. Nothing beats a hot delicious meal on a brutally cold day. Now that we have finally de-thawed from a pretty rough winter it is on to bigger and better things, Farmer’s Markets! I love being able to buy local and support small farms. Before we get into ...
