Escarole and White Beans. 2 large heads of Escarole. 1 head of garlic or 4-5 cloves. 1 can of Great Northern Beans or 3/4 cup dry. 1/2 teaspoon of crushed red pepper (optional). Cut up and wash Escarole as you would lettuce(do not have to spin totally dry). In a med/large stockpot saute garlic and olive oil, add the chopped escarole when the garlic has gotten a little soft and the pan is nice and hot. It will at first seem like too much greens but will quickly wilt to less than 1/2. Add salt and pepper.
