Gai Yang: Thai Barbecued Chicken « GourmetGreg.com
http://gourmetgreg.com/poultry/thai-barbecued-chicken
Tonkatsu: Japanese Pork Cutlets. Gai Yang: Thai Barbecued Chicken. Is Thai for chicken, and yang. Is of course barbecued, so gai yang. Is Thai style barbecued chicken. The marinade is the secret to getting a delicious golden browned skin with a spicy taste of coconut milk and tumeric. 3 lbs chicken pieces, skin on (thighs, legs, breasts, or a whole chicken, cut up). 2 t fresh pepper, finely ground. 4 cloves garlic, minced. 13½ oz. can coconut milk. 9 cloves garlic, finely minced. 6 T fish sauce (see note).
Tandoori Chicken « GourmetGreg.com
http://gourmetgreg.com/poultry/tandoori-chicken
Gai Yang: Thai Barbecued Chicken. Tandoori chicken originates from India where the chicken (or other meat) is marinated in yogurt and spicy seasonings, and then cooked at high temperatures in an earthen oven or "tandoor." It is traditionally moderately hot, although those who like less spicy foods can use less cayenne pepper. This dish is low in fat due to the skin not being used. 1½ lb. whole chicken, cut up (or equivalent in thighs, breasts, etc.). 1½ C. yogurt. 1½ C. olive oil. 1 T garlic, minced.
Russian Apricot-Pineapple Chicken « GourmetGreg.com

Rosemary-Onion and Basil-Onion Focaccia Bread. This isn't really a Russian recipe. It's named for the Russian salad dressing of course. It's quick and easy to make, and tastes surprisingly good! 4 chicken breast fillets, skinless, boneless. Or 8 chicken thighs, skinless, bone in. 1 18 oz. jar of apricot preserves. 8 oz Russian salad dressing. 1 sm can chunk pineapple. 1 pkg dry onion soup mix. Tagged quick and easy.
Enchiladas Suisas « GourmetGreg.com
http://gourmetgreg.com/poultry/enchiladas-suisas
Egg, Chorizo and Chicken Taquitos. Fish with Creamy Dijon Sauce. Enchiladas Suisas are "Swiss" style enchiladas. In this recipe you will prepare a salsa verde (green chile sauce), then dip tortillas in the sauce and fill them with a mixture of cooked chicken and cheese. The remaining sauce and more cheese are poured over the top, covered with cream, and then baked. My personal preference is to use flour tortillas although corn tortillas are traditional. 1 brown onion, diced. 1 clove garlic, minced. Stuff...
Kung Pao Chicken « GourmetGreg.com
http://gourmetgreg.com/poultry/kung-pao-chicken
Linguine with Clam Sauce. This recipe is by no means traditional, I've developed it over the last year or two to suit my own tastes. The measurements are very, very rough. Don't even bother using a measuring spoon! I suggest you vary the size of the diced and chopped ingredients to suit your own preferences. Warning: Do not eat the chile peppers unless you enjoy extremely spicy foods! Frac34; to 1½ pound boneless, skinless chicken breast. 2-4 T garlic, minced. 2-4 T ginger root, minced. 2 T soy sauce.

Tuesday, July 5, 2011. Back home in Newcastle. We are now back in Newcastle and have moved into our home again. The people who rented it while we were away took very good care of it so we were very grateful. You do hear some horror stories. Our home/office is in Charlestown, Newcastle and the office number is 02 4943 1887. We hope to see you there. Our total mileage for our trip was 72,000 kilometres. Not bad for two grey nomads having a casual "holiday". Links to this post. Friday, March 18, 2011. Our t...

About Us
Wednesday, March 11, 2009. For those of you who don’t know Mike and myself and how we began this journey around Australia I shall briefly fill you in. Mike and I live in Newcastle, have a lovely home, two amazing daughters and their partners, the best four grand children in the world (of course I’m biased) and a wonderful business in New Lambton. Our first spanner in the works was that we had just purchased a new Nissan X trail which we loved, was great to pull our camper trailer but not a caravan so we ...
