Thursday, May 27, 2010. 1 small (70g) carrot, grated finely. 375g white fish fillets. 1 Tbsp fish sauce. 2 tsp chopped fresh coriander leaves. 1 tsp sweet paprika. 1 tsp grated lime rind. 2 cloves garlic, crushed. 2 tsp grated fresh ginger. 3 green onions, chopped. 125g green beans, chopped. Cucumber and mint chutney. 1/3 cup white vinegar. 1 small 9130g) green cucumber, chopped finely. 1 small (150g) red capsicum, chopped finely. 1 Tbsp chopped fresh mint leaves. 1 Tbsp lime juice. 2 Tbsp olive oil.

Thursday, May 27, 2010. 1/2 fennel bulb sliced thinly. 1/2 chinese cabbage sliced thinly. 1/2 tsp thyme leaves. 80 mls olive oil. To make dressing, pound thyme leaves with mortar and pestle, whisk remainder of ingredients together and add pepper to taste. Toss all salad ingredients and dressing together and this is delicious with most fish dishes. Thursday, June 4, 2009. 1 Can(jar) marinated artichokes drained and diced. 2 sliced spring onions. 2 T sour cream. 1 clove garlic crushed. French bread, thinly sliced (about 1 cm wide). Place first five ingredients in bowl and mix well. (If a little dry add more mayo and sour cream). Place in small baking pan. Spread evenly and cover with grated parmesan cheese. Place under grill until brown or place in medium oven until cheese is melted and has turned golden. It is always a great hit. 3 slices red onion.

Tuesday, April 21, 2009. NSW - Balina - Shelly's On The Beach. While our caravan was being repaired in Alstonville, we spent the day traveling from Balina up the coast to Byron Bay, Lennox Head and then back. We had breakfast at “Shelly’s On The Beach” in Balina. It is a beautiful spot, and as the name says, right on the beach, serving breakfast, lunch and coffee. I had an omelet and Mike had bacon and eggs. They were both delicious served with sour dough bread, our favourite, and the coffee was great.

Friday, August 28, 2009. This cafe was recommended by some locals to our friends Robyn and John while they were up here for a holiday. We were so impressed by what they had said that we decided to try it ourselves. We have now eaten there several times. The decor is what I would call bohemian and the atmosphere is very relaxed. Wednesday, August 4, 2010. 188; chinese cabbage sliced. 188; red cabbage sliced. 1 large mushroom chopped finely. 1 apple sliced or chopped finely. 2 sticks celery sliced. 3 tablespoons pepitas (Add just before dressing). 2 tablespoons whole egg mayonnaise. 2 tablespoons chili sauce. 1 tablespoon balsamic vinegar. Juice half a lime. Combine well in jar and chill. Pour over just prior to serving and toss well. This is a lovely fresh tasting salad. With thanks from our friends Di and Steve Moore.

Launceston is a city of contrasts, with modern marinas where there are many sleek restaurants and a wonderful collection of 19th century architecture everywhere. We then stopped in at the Ashgrove Cheese Factory,. Sampled cheeses and filled our fridge with many that we liked. Next stop was the House of Anvers which is the local chocolate factory. Tuesday, July 5, 2011. Back home in Newcastle. We are now back in Newcastle and have moved into our home again. The people who rented it while we were away took very good care of it so we were very grateful. You do hear some horror stories. Our home/office is in Charlestown, Newcastle and the office number is 02 4943 1887. We hope to see you there. Our total mileage for our trip was 72,000 kilometres. Not bad for two grey nomads having a casual "holiday". Cheap Travel Insurance Australia.

Tuesday, September 28, 2010. Qld - Airlie Beach. Well, here we are back on the east coast at Airlie Beach after traveling the longest distance we have covered over a few days on our entire trip. In the past eight days from Darwin to Mackay, we have travelled 2,350 kilometres with a fuel bill of $847.00, our most expensive week of fuel so far. We stayed at Sapphire for two days on the way and spent the time fossicking for gems and found a few sapphires and zircons, only small ones but it is a lot of fun.
