Grow cook eat nyc. The kitchen table talk community. Meatless Monday- Quinoa Stuffed Peppers. May 30, 2011. I am all about quinoa and have been using it more and more as my go to grain. Like most whole grains quinoa is packed with fiber, but what makes it superior to the rest is its protein content. It contains about 15g of protein per cup! 2 Tbs olive oil. 1 Tbs ground cumin.
