Since most weeks, I also buy a dozen of the most beautiful (inside and out) free-range eggs from the CSA, frittatas have become a regular weeknight dinner. In a cast iron pan at medium-high heat, sauté sliced or diced onions in a little oil. While vegetables are cooking, whisk together four large eggs. Bake in 350 Fahrenheit oven until top is set.

I am all about quinoa and have been using it more and more as my go to grain. Like most whole grains quinoa is packed with fiber, but what makes it superior to the rest is its protein content.
