As a lot of you might have heard there is a strong movement rising called Meatless Mondays. I thought that I would like to do my part by posting a meatless recipe every Monday for you all to enjoy. 2 tablespoons vegetable oil (I use safflower). 2 1/2 cups chopped onions. 1/4 cup plus 2 tablespoons curry powder. 4 fresh tomatoes diced. 12 oz organic spinach.

I am all about quinoa and have been using it more and more as my go to grain. Like most whole grains quinoa is packed with fiber, but what makes it superior to the rest is its protein content. It contains about 15g of protein per cup! 2 Tbs olive oil. 1 Tbs ground cumin.
