I’ve never used any part of the lemon rind in cooking other than the occasional zest, but for Moroccan cooking you actually use whole slivers of the rind of preserved lemons to get a bold lemon flavor. Making the preserved lemons is the easy part it’s waiting a month to use them that’s hard!

Last year I posted a few Moroccan dishes including how to make preserved lemons. I dipped into my stash of preserved lemons (which are still going well! To make this tajine that’s bursting with citrus flavors. I made this in a shallow enamelled cast iron pot, similar to the Le Creuset Buffet Casserole. 2 tbs flat leaf parsley, chopped. Tsp freshly ground black pepper.

Before I knew I would be going to South Africa in December, one of my requests for my mom (who was there in August) was to bring back some Durban red curry powder. Now, I realize using curry powder is frowned upon by “authentic” curry enthusiasts, but I was curious to compare the Durban-style curry blend with what is typically used in the U.S. And let me tell you, it is HOT!

Basque Potato Tortilla: French Fridays with Dorie. 3 lbs duck meat, boned and trimmed. 1 lb pork back or panchetta. 3 oz dried blueberries. 1 oz unseasoned breadcrumbs. 2 tbs kosher salt. 1 tbs ground black pepper. 1/3 cup dry white wine. I was given some lovely duck sausage that a friend had made. What better than potato, onion and duck fat! Once again Dorie has given use an easy recipe to tweak to our own specifics.
