Cooking with the Lambs: January 2009

http://cookingwiththelambs.blogspot.com/2009_01_01_archive.html

Wednesday, January 7, 2009. Handful of shelled pistachios (I use salted ones). Fresh boneless skinless chicken breasts. In a food processor, pulse the pistachios until finely chopped - some small pieces and some "pistachio flour." Pour this onto a plate. Dredge chicken breasts in the pistachios and pan-fry in a little olive oil until cooked through. I have found it works best to pound your chicken breasts to about 1/4" thick - that way the pistachios and chicken cook at an even rate.

Thursday, October 30, 2008. 1-2 small cans of cream of broccoli (or cream-of-whatever). Place the chicken breasts in the crock pot, pour the cream of broccoli on top, if too thick, thin it w/some milk and cook on high for 4 hrs. After that add the broccoli florets on top of everything for another 15-20 mins (depending on how hard/soft you like your broccoli) and it's done. Serve over rice, super yummy and quick. Cooked up for you by Lori. Categories: five ingredients or less. 1 can black beans, rinsed.

We must strive to do what little we can with what little we have in the place we are now with the greatest love possible." St.Therese of Lisieux. Tuesday, July 16, 2013. Summer is going by all too quickly. We have been busy, busy, busy. Currently, we are in Ohio and seem to be going non-stop everyday. With all the hustle and bustle, blogging has been taking a backseat. Although, there are a couple conversations lately that have been too good not to share. Enjoy! Dominic, what is my name? Oh, my heart!

We must strive to do what little we can with what little we have in the place we are now with the greatest love possible." St.Therese of Lisieux. Sunday, April 20, 2014. Sometimes I am stunned by the words my children speak. This morning I KNOW, without a shadow of a doubt, that God spoke directly to me through my daughter. Her words pierced a part of my soul that so desperately needs the light of Christ. I had some white cloth I wanted to place on the cross marking their grave. Mom, I know you are sad.
