Yummy Sweet Potato Casserole. 4 c sweet potato, cubed. 1/2 c white sugar. 2 eggs, beaten. 4 T butter, softened. 1/2 t vanilla extract. 1/2 c packed brown sugar. 3 T butter, softened. 1/2 c chopped pecans. 1 Preheat oven 325 F (165 C). Put sweet potatoes in med. saucepan with water to cover. Cook over med. heat until tender. Drain and mash. 2 In large bowl, mix together the sweet potatoes, white sugar, eggs, salt, butter, milk and vanilla. Transfer to 9x13 inch baking dish.

Thursday, March 12, 2015. Chicken and Bacon Pasta with Cream Sauce. I originally found this recipe. Online, but had to make several changes in order to make it kid-friendly. Below is my version of the recipe I found. My whole family loves this dish. 1 C half and half, or heavy cream (I use cream). 1 - 1 1/2 C cooked, shredded chicken (I use my rotisserie chicken). About 8 oz. cooked (leftover) pasta (about 3-4 C). 1 C shredded Mozzarella cheese. Hand-full shredded fresh Parmesan. 1/2 t garlic powder.

Sweet and Smoky Pulled Chicken. 2 pounds boneless skinless chicken breasts. 1 package McCormick Slow Cookers Sweet and Smoky Pulled Chicken Seasoning Mix (with the gravy and sauce packs in the grocery store). 1/2 cup firmly packed brown sugar. Place chicken in slow cooker. Mix Seasoning Mix, ketchup, water and brown sugar until well blended. Pour over chicken. Cover. Cook 8 hours on LOW or 4 hours on HIGH. Remove chicken from slow cooker.
