Cooking With The Lights Off. January 4, 2016. Salmon, Asparagus and Couscous. Stuck on what to have for dinner tonight? How about a quick, filling and healthy meal that has more flavour than you can shake a spear of asparagus at! Not only does is pack flavour but it helps to get you those much needed 5 a day. The tomato and asparagus make up two of your 5 a day and the spinach sets you on the way to your third. 10 spears of asparagus. Half a mug of uncooked couscous. A handful of spinach. 1 tbsp soy sauce.

Thursday, June 25, 2015. Cheesy Ranch Pasta and Sausage in a Skillet. 1/2 lb. Kielbasa, sliced and halved. 8 oz dry pasta. 2 Tbl ranch seasoning mix. Salt and pepper to taste. 1 C shredded cheese (I used half cheddar and half Parmesan - yummy). Heat oil, and saute sausage lightly. Add remaining ingredients, except the cheese, and bring to a boil.
