Wrap garlic in foil and roast in oven until soft (about 20 min). Heat a little bit of oil in a pan and add the onion, cook until softened. Season with salt and pepper then add tomato, 2 tsp sugar, 2 Tbsp balsamic vinegar. Cook until soft (about 4-5 minutes) then set aside. (onion jam). 1/2 tsp. paprika. 1/2 tsp. oregano.
