Sweet Potato Patties – low carb. By My Cookbook Challenge. Here is the original recipe (yields 8 patties);. 2 large sweet potatoes, shredded. 1 tablespoon vegetable oil. 2 tablespoons melted butter. 3 1/2 oz crumbled feta cheese. 4 tablespoons sour cream. 2 tablespoons chopped fresh parsley. Mix potato, cheese, flour, egg, melted butter. Heat oil in pan. Spoon about a 3 inch ball of mixture onto the pan and flatten to desired patty size. Leave a Reply Cancel reply.
